I wouldn't use it just because of the chemicals from vinyl. What about pergo? Or search for eco-friendly flooring materials. You might be amazed!
We had a house once with vinyl tile in both the kitchen and den. It had a tile pattern and looked quite nice. If you can afford it, consider ceramic tile. That is what we have now.
