If you've seen the clerk slide something over a pad, they're deactivating the alarm device. These little devices are usually inside the package and can't just be removed from the outside. The package has to be opened. Even then, they may be kind of hidden so you'd have to look for it.The sensors at the door can't tell what is being stolen, just that the little alarm device hasn't been deactivated and makes the alarm trip.
