Question:

how can I design evaporator and heat exchanger?

to evaporate water

Answer:

It really depends on your specific application. Are you talking about an engineering application? (there are many mechanical/chemical engineering books that deal with this subject), or is this a simple home project? it depends on your specific application. Some of the things you should consider include: What kind of water do you want to evaporate? is it pure? salty? dirty? is it corrosive? How much water are you trying to evaporate? What is the source of heat (or is there one) for your evaporator? How much money is available to buy/build the device? Is this for indoor or outdoor use? (if outdoor, what type of area do you live in?) There are a lot of things to consider. if you describe more of what you are trying to I'm sure you'll get more info. hope this helps
go to a home brew shop, and get the still and cooling coils. afterwards you may be able to use it for other things...... or at least the parts should have good resale.
