I want to press the heck out of tofu, and then freeze itso how would I press it overnight in the fridge?thanks!!
I just did this! I used a steamer insert (the insert you put in a pot when you steam things) and placed it in a bowl so the liquid would go through the holes and into the bowl. Then, I placed the tofu (I used firm) in the steamer. On top of that I placed another bowl, then something heavy to press the liquid out (I used an unopened jar of pasta sauce). I pressed mine for 24 hours (but that amount of time is not necessary). It was good, but I think I need to experiment and do it with different types of tofu. I've had it before at a friend's house and it turned out really dense and amazing. I can't seem to get the same results myself.
I always freeze my tofu..... I freeze it in the package it... defrost it and then press it..... I just squeeze it between my palms and that removes a sufficient amount of water for it to absorb whatever I choose to marinate it in. I hope this helps!
take it out of its package then wrap it in a cloth then place something kind of heavy on it (books, a little laptop, dishes.........)
Its easier and faster to use a tofu press, such as the EZ Tofu Press to get all of the water out. This would remove the water and no freezing would be required. Freezing will provide a very dense piece of tofu, and very chewy. You can press and then freeze. I would also allow the frozen tofu block to defrost after freezing to remove the water.
