There were hand churns (that people still use today.) There's a small canister for the ice cream to sit in and it goes into a larger canister where the ice and salt sit. A crank turns the ice cream canister inside the larger one and the salt and ice freeze the ice cream. We have one and it works great! Just takes a little elbow grease.
