You are exposing yourself too salmonella with raw eggs. The acid in the lemons and limes may kill it but why take a chance?
I think there should be 2 pkg. of cream cheese in there somewhere. It sounds like the old recipe for cherry cheesecake, which is plain and topped with canned cherry pie filling. Juice doesn't thicken anything, quite the opposite.
adding the 2 egg yolks means you need to bake it!! Lemon or lime juice from fresh or concentrated will do the same thickening job on sweetened condensed (Eagle Brand) milk. It will thicken it perfectly without any thing else including the eggs for no bake pies. Sometimes I fold in a carton of cool whip after getting the Eagle Brand thickened. Makes an amazing pie!!
Yes, concentrated lemon and lime juice work the same way. You are talking the lime juice in the bottle or squeezy aren't you? I'm not sure what you are making, but like a fridge pie it calls for cream cheese, condensed sweetened milk and Lemon juice, it does not call for eggs, so you may not even need them. What are you making?
Absolutely use the lime juice. I prefer the flavor of lime juice to lemon juice.
