Answer:

Table tops for end tables or coffee tables would be my first thought. Adhere them to a piece of plywood, build a wooden frame around them, then grout or mortar and seal. Quartz isn't porous, so as long as you pick the right wood/wood sealer you could use it outdoors. Depending on the size, you could also use them to make a mosaic in poured cement for stepping stones, etc for the garden. If they're small enough, they'd also work in place of rocks for potted plants that need drainage.
