Mom's Roast Turkey Recipe 1 turkey, approx15 lbsJuice of a lemon Salt and pepper Olive oil or melted butter 1/2 yellow onion, peeled and quartered Tops and bottoms of a bunch of celery 2 carrots Parsley Sprigs of fresh rosemary, thyme Need help figuring out how big a turkey to get? Butterball has a turkey calculator that helps you figure out just how many pounds you needIn general, plan for: 12-15 lb turkey for 10-12 people 15-18 lb turkey for 14-16 people 18-22 lb turkey for 20-22 people To start, if the turkey has been refrigerated, bring it to room temperature before cookingKeep it in its plastic wrapping until you are ready to cook itWhile in the refrigerator, and or while you are bringing it to room temp, have the bird resting in a pan, so that if the plastic covering leaks for any reason, you are confining the juices to the panIf you get a frozen turkey, you will need to defrost it in the refrigerator for several days firstAllow approximately 5 hours of defrosting for every poundSo, if you have a 15 pound turkey, it will take about 75 hours to defrost it in the refrigerator, or around 3 daysHandle a raw turkey with the same amount of caution as when you handle raw chicken - use a separate cutting board and utensils to avoid contaminating other foodsWash you hands with soap before touching anything else in the kitchenUse paper towels to clean upnfd
If the skin is on it, rub with canola oil to really grease it up, the meat doesn't dry out when roasting in the oven that wayCook for the weight of the meat, as directed, and if the skin gets too dark put an aluminum foil 'tent' over it at that pointMine worked out perfectly that way, very juicyBut if you do a crock pot, it'll be just as good.
Easy Crockpot Turkey Breast 1 whole turkey breast, thawed ? cup of Water (yep, that's all you need!) 1 Packet of Ranch Dressing Mix 1 Packet of Italian Dressing Mix 1 Packet of Turkey or Chicken Gravy Mix Put breast in crockpot, pour water around the baseSprinkle all 3 dry seasoning packets over roastCover and cook for 6-7 hours on lowRemove to cutting board and let sit 15 minutes; slice thinly across the grain (electric knife works best) It makes great tasting gravy, too.
I tried this recipe and was amazed by the tasteIt is the only way I will make my turkey breast from now onDon't worry about not adding liquid, it really works out wellBut you can add 1/4-1/2 cup of broth if you are really uncomfortable cooking it dry 1 (6 pound) bone-in turkey breast 1 (1 ounce) envelope dry onion soup mix 1 tbsp butter, softenRinse the turkey breast and pat dryCut off any excess skin, but leave the skin covering the breastRub soften butter on the skin and then follow with onion soup mix all over outside of the turkey and under the skinPlace in a slow cookerCover, and cook on High for 1 hour, then set to Low, and cook for 7 hours.
