Hi I need some helpI am a puerto rican wife and motherEverything is fine, minus the fact that I cook the same old thing over and over and we are boredWe just recently stop eating beef and pork so we can live in the more healthier side but, every thing is chicken stew or roasted chicken, I do switch up the sides but it is still the same old mealsI have went and bought a cook book but I want to still make meals that are part of my cultureCan some one please help me find other ways to make chicken legs and chicken thighs and whole chickens? I am open to all.

Answer:

If you are looking for the healthier side, I suggest eating more fish, Puerto Rican cuisine is loaded with excellent ways of preparing different fish dishes as for chicken: Pollo Asado con Glaceado de Ron y Miel de Abejas: - 1 3 to 3-1/2 pound chicken - Adobo to taste - 2 tablespoons golden rum or spiced rum - 1/4 cup honey 1 - Preheat the oven to 400 FSeason the chicken with the adobo and set asideCombine the rum and honey and brush the chicken with a light coat of the glazeSprinkle more adobo over the chickenPlace the chicken in a roasting pan and cover with aluminum foil2 - Bake for 20 minutesRemove the foil and brush the chicken again with the glazeBake, uncovered, for 30 minutes more, brushing the chicken with glaze every 10 minutesLet the chicken cool a little before carving If you cannot find Abodo in the stores, then you can make your own by grinding the following together in a mortar/pestle: 4 cloves garlic 1 teaspoon dried oregano 1 teaspoon peppercorns 1/2 teaspoon paprika 1 teaspoon salt
