It will still rot. Taxidermists use pre-made fish shapes and paint them to match the one they want to commemorate.
A 3mm Polycarbonate lens in an ASTM rated frame (sports safety rating) will be the best option. The testing standard for this is essentially a .38 caliber bullet being shot at the lens to make sure it passes the safety test. If it doesn't pass, the lab remakes the lenses. This way you can ensure that the lens you are using is going to hold up to a punch. Technically, polycarbonate is the softest lens material you can get. This is how it can withstand the impact. It absorbs the impact into itself instead of being more rigid like glass or plastic that shatters upon impact. This is what things like airplane windshields are made of. That is how impact resistant they are. The ASTM rated frames are also made of polycarbonate so they too can absorb the impact. Just make sure you are getting 3mm polycarbonate as this is what has the best impact resistance.
