not a big fan of metal but there is something more mellow which is kind of like progressive rock or i think there is even a genre called melodic metal? but anyway you may want to try bands like Opeth, dream theater, sonata arctic, stratovarius, angra, children of bodom etc etc etc. hope this helps
that would bring down the level to hard rock. possibly even alternative metal, but have you tried folk metal?

Yes there is. One kind is Alternative Metal, which is slightly softer than metal. But not all metal bands are really hard and fast, some of them are soft and slower than most.
If you find metal to be way too hard, maybe you shouldnt bother with metal at all
