The fatty will stick better in the corners.
The thin tire will steer easier at low speed (when you actually turn the front end to steer, rather than lean). The fat tire will smooth out road irregularities (like the freeway rain grooves out here in SoCal), plus just iron out the rough spots better, in general. Plus, the more rubber on the road, the better the grip.
