it's not really the sound that you should worry about but the feel while you are on the bike. and hopefully its the back tire locking so you will feel some fishtail. if its the front you will more than likely be over the bars and the sound really will be the last of your concerns. if you are unfamiliar with your bike take it in a big empty parking lot and hit the back brakes hard so you can get an idea of what it sounds and feels like
I agree with Jimmy, once the brakes lock up they no longer make any sound because they're not turning. The sound you hear is the tire sliding on the road. This is definitely not a preferred sound. If you think you have a problem with your brakes locking up, you need to stop riding the bike immediately and get it checked. Like Jimmy said, if the front locks up, worse case you're over the bars and best case the front end slides out from under you and you're down anyway. Stop riding it and get it fixed!
It wasn't the brakes or the tyres, it was the engine and chain. You had the back wheel locked up whilst the clutch was still engaged so you were actually stalling the engine. When you have to do an emergency stop, pull in the clutch.
Always give year, make, engine size and model # when asking questions. We need all of that info to give an informed answer. Newer sport bikes have floating calipers. When the brakes are locked, occasionally they shift to their stops and clank against the swing arm. Drum brakes, the shoes aren't mounted firmly so they can move when the brakes are applied. As the bike gets older, the moving parts ware out and can clank when taking up the slack of loose parts. Inspect all moving parts for ware.
