It won't work with out some sort of oil or butter on them they will only dry out and burnThe way I usually do fresh hashbrowns is to bake the potato the night before or earlier that day and let coolThen grate them and brown in very small amount of oil or sprayI usually have baked potatoes for supper and just bake a few extra for the next dayAlso if you salt them right away the salt will draw the liquid out of any fresh veggie of any kind and they will produce a lot of liquid, so they will steam/boil in the oven, I just don't think it will workAnd if you do fry them, always add salt after they begin brown so they won't turn into potato soup with all that liquid.
