When you press on an LCD panel (liquid crystal display), you are flexing the panel, which distorts the liquid crystals, which in turn changes the way the light from the backlights behaves - the ripple effect on the screen. If you drop a stone into a pond, it produces ripples spreading out from where the stone hit the water - similar principle. Don't press hard on an LCD screen - the glass is very thin and breaks easily.
