I just did this with some beef ribs the other dayFirst time for meI put the ribs in a roasting pan and covered them with aluminum foil - sealedI preheated the oven to 250F and cooked them for 4 hoursThey were done to perfectionYou will want to cook your roast longer since it is one solid piece of meatI would cook it for at least 6-8 hours at 250FThe longer the betterCompletely covered or it will dry outI also made a 'dry rub' for the ribs and let them sit overnight with that onIn the morning it wasn't dry anymore, so I poured that over the ribs before I sealed them upIt was brown sugar, dry mustard, cayenne pepper, salt, pepper, and garlic powderThe sugar pulled juices out of the meat, that's why there was liquid in the bag overnightIf this seems like too much work, you can also use a crock pot to cook it inYou can put the BBQ sauce directly in with it.
