Frozen Chicken Enchiladas
I agree with your mom about thawing them first - but thaw them in the fridge so they never come up to an unsafe food temp If they're cooked already, you could reheat them in the oven, or you could even try the microwave after thawing I would suggest putting some aluminum foil over them as they cook so they don't dry outRemove the foil for the last 10-15 minutes of cooking to brown up the top Then, send some to me.
After slicing them, add a bit of water to a baking dish, cover with foil and place it in the ovenHeat at about 325 degrees for 20 minutes or soWe heat the meatloaf the same wayIt steams it, doesn't dry it out.
If you make this trip every year I'm surprised you haven't already made a list Do it this year for sureStart by listing everything you think you'll needWhen you pack it, check off on the list that you've done so Then, when you're on site, keep trackMake new listsOne should include everything you took that you used oftenOne should be those things you occasionally used (or would have used if the weather were different)The third should be those things you never usedFourth should be things you didn't take but neededNext year, discard everything on list 3Then combine lists 1 and 4 List 2? Eyeball the items carefullyDid you really need that X, which you only used once? Decide what on that list you really need to take, and add it to list 1 Here are more tips on camping check lists:
