I made this a few nights ago and my husband said it was the best fish he has ever had! make some seasoned flour (I paired this with pasta so I made it italian and used seasonings to go with that taste, but you can use anything.) and coat your fish in a very light layer of it heat a pan with a small amount of oil (any type will do) and stick the fish in til both sides are a very light goldthen trasnsfer the fish to the oven (about 400) and top with a little cheese (i used mozerella)cook until the cheese is brown and will have a crunchi served this with pasta and broccoli tossed in a oil and garlic sauceit was a hit and the whole meal only took me about 20 MINUTES! good luck!
