that's because you are not supposed to use that shape panit will result in an unevenly baked good since it is too deep for this purposeif you must use this pan (seriously, go buy a cheap, disposable aluminum foil cake pan for $1), then keep checking until a wooden skewer inserted into the center of the cake comes out cleanby that time, however, the outside edges will be burnt.
