You might be talking about flat wire - anyway, there is no 'best', it depends on the size of the stone, the aesthetics of the design, the height of the stone and how much needs to be covered to hold, whether you want a decorative edge, etc. In other words, you use what works. You might start with a 18 or 16 gauge flat wire, go thicker if you need it.
