i wouldn't, cannoli tubes are Metal for a reason.they conduct heat.and its easier to remove the cannoliif you try to use a wooden one for frying you may not to be able to get it off and if you do then the insides might be raw but your question.is it safe? yeah.its as safe as normal frying.
I made them from a 1 inch wooden dowel, like they did in the old country.
