I want to make a small pork loin roastMaybe 2 or 3 lbsEnough to feed one person for a week or soI plan to rub it with onion and garlic powder, then cook it for half an hour at a high temperature and several hours more at a very low temperatureI have a 9 by 13 nonstick cake panWill that work? Or should I buy a disposable roasting pan? Also, should I cover it with aluminum foil at any point during the cooking process? I don't want it to come out dryI've never made roast pork before, only roast beefAny advice would be appreciated!
