It could be more do to with her teeth than the bit. Have the dentist check her teeth, she might need to have them floated, the previous owner might not have had them checked in some time.

They have a little roller in the middle for horses who like to fuss gives them something to play with. ADD the point of a rubber bit isn't for a horse to play with it? Where did you hear that? Rubber bits are for a softer mouthed horse who either is too soft-mouthed for a metal bit or who is being ridden by a beginner with bad hands. I use a rubber bit on my horse (and many others, they are a good bit for OTTBs, since you want to rework their mouths) and I've never had problems with horses fidgeting with them.
