Question:

How to keep the cheese from falling out of mozzarella sticks?

I bought TGI Friday's Frozen mozzarella sticksI put them on an aluminum foil lined pan (sprayed with cooking spray), put them in the oven at 450 for 8 minutes as instructed, and the cheese just oozes out and I can barely eat them.Any tips to prevent this from happening?

Answer:

This is not feasible for several reasons: 1) Spheres have lousy packing efficiency (about 74%) 2) The skins of the spheres would need to be relatively thick to prevent buckling from external pressure 3) The skins of the spheres would conduct heat, and lots of it, due to their thickness 4) The space between the spheres would still conduct heat 5) Evacuated spheres would be expensive to manufacture
Well first off I wouldn't suggest using any metal to make them, as any advantage you get from the vacuum will be undone by the thermal conduction through the metalSecondly, and perhaps more significantly, how would you make vacuum filled balls in the first place?
You have the correct ideaLet me ask you a question, thoughPick up a thermos bottlenow, walk into a freezerDoes it protect your hand from the cold? Why not? One factor you always must address is the conductivity of the material you make your vacuum filled balls out ofSecond, you need to worry about ways that heat can escape around your containerSure, cost is an issue, but there is usually a way around thatFinally, you just have engineeringVacuum has this nasty tendency to get filled in.
To make a plastic ball strong enough to sustain a vacuum under atmospheric pressure, it would need approximately 1/4 thick walls and would be very difficult to construct economicallyMaking such balls out of aluminum would not only be just as expensive, but the highly conductive wall would totally dominate the insulating effect of the vacuum it containedHowever, most modern double glazing employs evacuated space between the glass panes to provide insulationBased on ASME pressure vessel design specification and PET plastic.
Sounds like your oven is Hotter than the temp you are setting it for.( buy an inexpensive oven thermometer) If the temp is right on the cheese shouldnt do thisAlso make sure it is completely frozen or it will ooze out.
