Okay, fist of all, you don't wrap ground meat in aluminum foilYou need to wrap it in plastic wrap, or and air tight bagThe brow spots or due to oxidation which does not mean it's BAD But holding any ground meat for longer than 3 days (raw) is not a safe idea because bacteria can spread quickly throughout the mixture - ergo, buy only what you will use for a couple of days, or make them into patties and put them in the freezer.
