that would be parchment paper but you can use any paper! No small boy has ever been sickened or died because they chewed their papers and tossed them at GWashington por trait over the teacher's head unless caught I use copy paper and always haveI used parchment in the bakery when I had it, mostly because there was a huge case of it when I bought the bakery and I didn't run out for 5 years using it for all baked goods and in the display trays in the sales cases! It is to save on the clean up of the pans!! NOTHING else!! Just clean up!
