regional science fair is in seven days and i still have not run statistics on my dataim doing a roofing project to see which method provides the best insulationwhat statistics should i run?

There are probably minute parts of ferrous matter in the aluminum and copper, so it would fall slower because it would be attracted to these particles, but the differences probably couldn't be measuredtoo tiny
You should have setup your hypotheses and statistical methods before you gathered the dataI'm not sure that sampling is even relevant to your projectIf the data is stored in a computer, you can get the actual temperature gradient (exponentially smoothed) for each roof and display that graphicallyHypothesis testing and sampling methods is probably irrelevantWith that number of data points, it should be clear what roofing method provides better insulation under specific conditionsAre the roofs all exposed to the same environment? Is this insulation to protect against cold or heat or both? What measurements have you taken? Inside temperature? Outside temperature? Humidity? Wind speed? Wind direction? Rain? Snow? Some roofing methods may be better under different conditions.
