Answer:

You might like to try a different way of making cheesecake - no cook version which I swear by400 grams cream cheese (I use Philadelphia) 400 grams Greek strained cow's yoghurt (very thick) 6 tablespoons icing sugar (powdered sugar) 400 grams digestive biscuits (Graham crackers I think in US) 50 grams ground almonds (optional) 170 grams good butter (melted) 1 and half packets cherry (or other appropriate flavour) jelly (jello) mix Your own choice of fruit topping - I often use tinned black cherries (sour cherries) in natural juice Grind down the biscuits until like fine breadcrumbs, combine with ground almonds and mix in the melted butterMix well and then work into the base of a spring form cake tinChill this for about 30 minsMeanwhile mix the cream cheese, yoghurt and icing sugar well until smoothWhen the base is ready smooth the cream mix over the biscuit base and chill again for about 30 minsPrepare the jelly mix with one tall water glass boiling water and one glass of the natural juice from the tinned fruit (which has been chilled if possible)Mix wellLeave to cool to room temperature without gelling if possiblePour the fruit over the chilled cream, arrange evenly and pour over the jellyChill for about 4 hours.
I have seen people cover the bottom of the spring form pan with the extra wide heavy duty aluminum foilAnd you only need a small amount of water in the bottom of the pan you place the spring form in.
put the graham oie shell in the fridge for 5 minits when u preparing the fil;ling when u finsish put a heavy dutty aluminum foil around the spring dish put it in the water bath slowly then add the filling then put it in the oven and dont open it until after 20 cuz that will make it crake when the middle is jiggly turn the oven down and leave it for an hour it will crake a bit but thats ok it dosent harm
Whenever I bake cheesecake, I always turn the oven off before the center is set (still slightly jiggly)Then I leave the cheesecake in the oven with the door partially opened for approximately 30 minutesThis lets it finish cooking at a lower tempand usually doesn't result in cracks in the top If the top does crack on your cheesecake, you can always make a sourcream layer to cover it upMix 1 cup sourcream,1/2 cup sugar, and 1 tspvanillaPour onto slightly cooled cheesecake, then bake in 350 degree oven for 15 more minutes. This covers any cracks and gives a great taste to your cheesecakeNote; I use springform pan without waterbath.
95 degrees is lowAnything below this is usually a sign of HypothermiaYou need to warm your body up from the inside, since you are not warming up with a bath or blankets You need to drink something hot-tea, cocoa, soupAfter you have had hot drinks-take your temperature an hour later, it should start to riseIt sounds like the freezing rain and wind caused your body to greatly react.
