i would do a 5 layer dip Ingredients 1 (15 ounce) can refried bean 1 (8 ounce) package cream cheese 2 cups shredded cheese, , your choice 2 cups salsa, your choice 1 can sliced black olive Directions 1Pre heat the oven at 400 degrees2Take a 9 inch pie plate and spread the cream cheese on the bottom3Next spread the refied beans on top of the cream cheese4Spread the salsa on top of the refried beans5Sprinkle the shredded cheese on top of the salsa6Finally sprinkle the black olives on top of the shredded cheese7Bake in the pre heated oven for 15 minutes or until cheese is melted and bubbly.
Here's an easy Chilis Rellenos that isn't fried, so you don't have to worry about keeping it crispAnd it's stuffed with veggies, for all those health-conscious people Chilis Rellenos 4 large poblano peppers 2 tablespoons canola or vegetable oil, divided 4-5 ears corn on the cob or 3 cups frozen corn kernels 1 red onion, chopped 1 jalapeno, seeded and chopped 4 cloves garlic, chopped 1 can, 28 ounces, fire roasted diced tomatoes, drained well 1 1/2 teaspoons cumin (1/2 palmful) 1 teaspoon dried oregano, eyeball it in your palm Salt and pepper 1/2 cup cilantro leaves 1 10 ounce sack baby spinach 4 scallions, coarsely chopped 1 lime 1 cup shredded Chihuahua, or Monterey Jack cheese Preparation Preheat broiler or grill pan to high Place poblanos under broiler or on hot grill and char evenly all over, 15 minutesWhile peppers and rice are working, scrape the corn off the cob: invert a small bowl and place it in the bottom of a large bowlStand cobs on end and scrape off kernelsThey will collect in the large bowlTo use defrosted frozen corn, pop it in microwave to take the chill off - a couple of minutes on defrost setting will do itDrain and dry the corn by spreading out on clean kitchen towelHeat 2 tablespoons of canola or vegetable oil in a skillet over high heatWhen the oil smokes or ripples add corn, onion, jalapenos and toss until the vegetables char at edges and onions are tender, 4-5 minutesReduce heat to medium high and add in garlic, fire roasted tomatoes and season with cumin, oregano, salt and pepperCook another minute or 2 then turn pan off Squeeze the lime juice over the corn mixture Split the charred peppers open but not in half with small sharp knife then scoop out the seeds with a small spoonPlace peppers in a shallow baking dish and stuff each split pepper with lots of the corn mix, mounding it out of the peppers then top with 1/4 cup cheese and place back under broiler to melt and char the cheese.
