Other than breaking the wall, you don't have many options available. Just lay copper out side the walls and disconnect the old ppipes in the wall and tie in the copper! You may have to move a few taps to be able to drill holes for the copper pipe but it will be a lot less work that trying to break open the walls remove the old pipe and renew with copper.
