Island Spice Pork Tenderloin I was missing Cumin so I subbed Paprika What you need: For the spice rub: 2 tsp Kosher salt 1/2 tsp Ground Black Pepper 1 tsp Paprika 1 tsp Chili powder 1 tsp Ground cinnamon 2 pork tenderloins 2 tbsp vegetable oil For the glaze: 1/2 cup packed brown sugar 1 tbsp (2-3 cloves)minced garlic 1.5 tsp Texas Pete hot sauce What to do: Preheat the oven to 350? FCombine the salt, pepper, paprika, chili powder and cinnamon in a small bowlStir together with a fork to blendPat the mixture over the pork tenderloinsHeat the oil in an ovenproof 12-inch skillet over medium ( I used a cast iron skillet for mine) Place the tenderloins in the skillet and brown on both sides, turning occasionally, about 4 minutes totalRemove from the heat, leaving the pork in the skilletStir together the brown sugar, garlic and Texas Pete in a small bowl until blendedSpread evenly over the tops of the tenderloinsPlace the skillet in the preheated oven and cook for 20 minutes
