What is the purpose of a Catalytic converter in the exhaust system?

I want to put a new FULL (front to back) exhaust on my car but leaving the stock cats will just restrict the new pipes and getting bigger catalytic converters is just to expensive. im not worried about legalities.so what do the cats do??? do i need them???the exhaust will be true dual if it helps.

Engine may not perform right. Basic function is to take the sulfer out of the exhaust
It's mandated to be there by Federal law. It helps to clean pollutants out of the exhaust system. In new cars it also helps set the computer to have the engine run at the most efficient level, not too rich nor too lean. In those states that require inspections, not having a working one in place is an automatic fail, but since you are not worried about legalities, none of this will affect you, up to the moment you get the fix it ticket and are not allowed to register your car without taking care of the problem
